Some mornings call for cereal.
And then there are mornings when you decide to do the absolute most for your children.
This Monday was one of those mornings.
I had been awake since 4 a.m. Babe and Oliver had been up watching England’s match (and thankfully, they won! 🥳), so I was only half asleep anyway. Rather than fighting it, I decided to make the most of the quiet morning.
Over the weekend, I’d made waffles and pancakes for a church programme. The boys weren’t there, but I’d shown them photos afterwards, and I could tell they wished they could have tasted them.
So I thought…
“Why not recreate the experience just for them before school?”
Zach still had school, so I wanted breakfast to feel a little bit special.
My 10-Minute Waffle Recipe
Honestly, this recipe has become my favourite because it’s quick, simple, and every single time the waffles come out beautifully.
Here’s exactly how I make them.
Step 1: Whisk the Egg
Start by cracking one egg into a bowl.
Whisk it really well until it becomes light and foamy. This makes such a difference to the texture.
Step 2: Add the Milk
Place the bowl on your kitchen scale and add:
* 250ml milk
Step 3: Add the Flavour
Next, add:
* 1 teaspoon vanilla extract
* 2 teaspoons sugar
When I made these at church, everyone wanted them sweeter, so I increased the sugar slightly. Personally, I don’t think they need lots of sugar because you’re usually adding toppings afterwards.
Step 4: Melt the Butter
Measure:
* 50g melted butter
Pop it into the microwave for around 30 seconds.
One important tip…
You want the butter melted, not hot. Let it cool slightly before pouring it into the milk mixture.
Step 5: Add the Flour
Now add:
* 225g self-raising flour
I like to keep washing up to a minimum because I don’t do the dishes 😂.
Babe usually does the dishes, so I try not to create unnecessary bowls!
Instead of mixing my dry ingredients separately, I simply add the self-raising flour straight into the wet mixture and whisk everything together immediately.
Less washing up.
Same delicious result.
Preparing the Waffle Maker
Before pouring in the batter, lightly brush the waffle plates with a little oil.
Don’t pour oil directly into the machine.
Just use a pastry brush to lightly coat the surface so the waffles lift out easily without sticking.
Then simply pour in the batter, close the lid, and wait a few minutes.
That’s it.
From start to finish, it usually takes me around 10 minutes.
The first time you make them it may take a little longer, but once you’ve done it a couple of times, it’s incredibly quick.
This is where the fun begins.
Our toppings cupboard has become quite dangerous!
Some of our favourites include:
* Oreo pieces
* Lotus Biscoff crumbs
* M&M’s
* Golden syrup
* Chocolate syrup
* Strawberry sauce
* Whipped cream
* Ice cream

I’m going to make a bold claim…
I genuinely haven’t had café waffles that beat these.
Maybe it’s because they’re fresh.
Maybe it’s because everyone gets to choose their own toppings.
Or maybe it’s because they were made with love at six o’clock on a Monday morning.
Whatever the reason…
They disappear every single time.
A Little Extra Before School
Breakfast doesn’t always have to be rushed.
Sometimes spending just ten extra minutes creates memories your children will remember long after they’ve forgotten what they actually ate.
This morning reminded me that doing “the most” doesn’t have to mean spending lots of money or hours in the kitchen.
Sometimes it’s simply waking up a little earlier, making breakfast from scratch, and watching your children smile before they head off to school.
Monday mornings don’t usually feel magical…
But this one did, I felt like a Mom. ❤️
